Hibiscus Glazed Bundt Cake

  • 1½ cups unsalted butter, at room temperature
  • 1½ cups granulated sugar
  • 6 whole eggs
  • 2¼ teaspoons baking powder
  • 1 teaspoon salt
  • 1 teaspoon ground cardamom
  • 3 cups all purpose flour
  • 1 tablespoon vanilla extract
  • ¾ cup milk
Hibiscus Glaze
  • ¼ cup dried hibiscus
  • 1½ cups water
  • 3½ cups powdered sugar
  • ½ cup heavy cream
  1. Preheat oven to 350 degrees.
  2. Prepare bundt pan by spraying with non-stick spray.
  3. In the bowl of a stand mixer, cream butter and sugar until light and fluffy.
  4. Add eggs, one at a time, to the butter sugar mixture.
  5. In a separate bowl, sift together baking powder, flour, salt, cardamom and flour.
  6. Add half the dry ingredients to the butter mixture.
  7. Add the milk and vanilla and remaining dry ingredients.
  8. Scrape the bowl to ensure everything is combined well.
  9. Pour batter into the bundt pan and smooth the top.
  10. Place in oven for 45 to 50 minutes, until a toothpick placed in the center comes out clean.
  11. Allow to cool completely.
Hibiscus Glaze
  1. In a small pot, mix the dried hibiscus and water together. Place on low heat and allow to simmer for 10 minutes. Remove from heat and allow to cool.
  2. Add 1 cup of the water to 3½ cups powdered sugar, and whisk together.
  3. Stir in the heavy cream.
  4. Note: you may need to add an additional ½ cup of powdered sugar to thicken and you may wish to strain the glaze, to ensure it is smooth.
  5. Spoon the glaze over the top of the cooled cake
