Lemon Roll Out Cookies

A super easy roll out lemon cookie recipe! This can easily be adjusted for a vanilla flavor or even peppermint! I created this recipe for the Salaam Design Holiday Cookie Cutters!

1Using a mixer, cream together butter and sugar.

2Add in eggs, on at a time. Mixing well after each addition.

3Mix in lemon extract and lemon zest.

4Sift together flour, baking powder and salt. Mix into wet ingredients until combined well.

5Wrap dough in plastic wrap and place in refrigerator for one hour.

6Preheat oven to 350 degrees Fahrenheit.

7Roll out dough on a well flour surface.

8Cut out cookies and place on baking sheet lined with parchment paper.

9Place cut out cookies in refrigerator for 10 minutes (this helps ensure cookies keep their shape).

10Bake for 8-10 minutes or until golden brown.

11Allow to cool and decorate to your liking.

1 cup unsalted butter, at room temperature

1 cup sugar

1/2 teaspoon salt

1/2 teaspoon baking powder

2 whole eggs

1 teaspoon lemon extract

2 teaspoons lemon zest

3 cups all purpose flour

Assorted cookie cutters, icing, fondant, sprinkles
