The Best Pie Ever

This recipe is the best pie recipe ever. Why? Well it incorporates all the best elements of your favorite pies all in one! Graham Cracker crust (check), vanilla bean filling (check), toasty meringue and fresh berries (check and check).

Directions

Crust

1Preheat oven to 350 degrees.

2Mix graham cracker crumbs, sugar and melted butter. Press into pie pan.

3Bake for 12 minutes or until golden brown.

4Allow to cool.

Filling

1In a heavy bottom sauce pan, whisk together flour, sugar, salt and milk. Continue whisking until mixture comes to a boil and thickens.

2In a large bowl, whisk three egg yolks. SLOWLY add in a small amount of milk mixture (this is called tempering). Continue adding the milk mixture to the eggs, while continuing to whisk.

3If there are lumps, run mixture thru a fine mesh sieve.

4Pour into crust and allow to cool in the refrigerator.

Meringue

1In a double boiler, whisk together egg whites, sugar, cream of tartar and vanilla until mixture turns white and doubles in size.

2Transfer to a stand mixer, fitted with a whisk attachment and mix until stiff peaks form.

3Fill icing bag with meringue.

4Create stars around the border of the pie.

5Use torch to brown meringue.

Fruit

1Layer fruit in center of the pie.

2Heat honey in microwave for 10 seconds.

3Use pastry brush to coat fruit with honey for a shiny finish.

4Enjoy!

Crust

1 1/2 cups graham cracker crumbs

2 tablespoons sugar

1/2 cup melted butter

Filling

3/4 cup sugar

1/3 cup flour

1/4 teaspoon salt

2 1/4 cups milk

3 egg yolks

2 tablespoons butter

1 teaspoon vanilla bean paste

Meringue

3 egg whites

1/2 teaspoon vanilla extract

1/4 teaspoon cream of tartar

1/2 cup sugar

2 cups slices strawberries and blueberries

1 tablespoon honey
