Two Year Blog-iversary

Just over two years ago, I began Amanda’s Plate at the encouragement of family and friends who wanted my recipes. In two years, so much has changed in my life. My journey in food took me to Los Angeles to compete on MasterChef, to develop recipes for companies like Crescent Foods, Noosa Yoghurt and Fred Meyer. Most importantly it has allowed me to connect with like minded people who love food!

To celebrate this milestone I made my favorite vanilla cupcakes! Recipe here 🙂

MasterChef

During my time at MasterChef, I met over 40 home cooks from all different backgrounds and walks of life. During some down time, I first met, Claudia Sandoval. I remember journaling about everyone I had met and I described her as a loud, bright, Latina. Soon after, she became my room-mate and I learned that she was super passionate about her culture, loved her daughter and family SO much, worked really hard to have a good life for herself and daughter and was taking a huge risk by competing on MasterChef. 

The competition is intense, both in and out of the kitchen. And I felt that some people were more hesitant to share about themselves and their vulnerabilities because of that. However, Claudia was real, raw, exposed and proud of who she was. 

After winning, MasterChef, Claudia wrote her cookbook, Claudia’s Cocina, has had pop dinners, appearances on Doctor Oz, food demos and more! We have remained friends and I am so excited to be able to celebrate this milestone of blogging by sharing her cookbooks!
